'Piece of cake to make' pancakes

I love Pancake day. I remember as a child, my mum would be in the kitchen all tea time producing as many pancakes as we could eat. No 'proper tea', just pancake after pancake for me and my two brothers. Drizzled in lemon juice and crunchy sugar, chocolate spread and bananas, or my favourite plain old golden syrup. Now I have my own children, they too love pancakes, however we prefer the American style, thick and fluffy ones. They are also perfect for a lazy Sunday breakfast, where all the family can sit together round the table, talking over the week's events. I like to make an occassion out of it, setting the table nicely with fresh juices for the children and a nice strong coffee for me and my husband. He loves these pancakes as a bacon and egg 'stack' with maple syrup. They are so simple to make, you will wonder why you haven't been having these all year round too. I use a big mug for measurements and they turn out great every time. Just don't use the free Sports Direct mug or you will end up with enough pancakes to feed an army!

All you need to make 12 medium or 9 large pancakes

A mug full of self-raising flour

A mug full of milk

One egg

Oil (for frying)

Whisk together the flour, milk and egg in a bowl

Heat up the oil in the frying pan on a medium heat

Ladle the mixture into even sized dollops in the pan

When tiny bubbles start to appear in the mixture, flip them over using a fish slice

Do this confidently or you will end up with a sloppy mess (not too bad if you have a dog that likes to eat your 'mistakes')

When they are golden on each side they are ready and should be nice and fluffy in the middle!

Hubby wasn't too happy having to wait while I took pictures of his breakfast.....
