Meat free midweek tea

A simple but tasty and cheap tea we love in our house. Stuffed peppers with halloumi! Ok, granted, it doesn't look like a lot, but it's very filling and tasty too. We like it with stuffed mushrooms, corn on the cob or asparagus and a little sweet chilli sauce yummy! You can add any filling you want, if you have some leftover chilli or bolognese stick that in instead of rice and halloumi. If you don't like halloumi, use good old cheddar instead, that works just as well. So if you're looking for something new to try, or just fancy a change give it a go. The best thing is it's so cheap, we all love cheap. I'll give you the recipe for 4 people.
4 large peppers
2 packs of supermarkets own brand chicken/ veg flavour rice
Block of halloumi
Firstly cook your rice as stated on the packet (usually 425mls cold water and boil with rice until water has been absorbed)
Slice the top of the pepper off and put to one side
Hollow out your pepper, to make an edible bowl
If it's uneven slice a bit of the bottom, so it stands up
When the rice is cooked, layer the pepper bowls with rice and cheese (or optional fillings) and place the pepper lid back on
Cook in a preheated oven on 180 for 30 minutes
